First off, I want to say that I am so proud of everyone who finished my Lemon Water Challenge – you rock!!! I hope some of you are going to continue doing it even though the challenge is over. It really is such an amazingly easy thing to do to help boost your health. If you just heard about it now, feel free to challenge yourself anyway!
For today’s post, I wanted to share a recipe I came up with a few weeks ago: a vegan Creamy Cauliflower Dill Soup. I know it sounds weird, but it’s super yummy, filling and healthy! Cree Cree even loves it, so you know it’s got to be good :) Before I share the recipe, I also wanted to announce that today I'm guest blogging on Alicia Silverstone’s vegan-based site The Kind Life. Whoo!! I could not be more excited about this – her book The Kind Diet has inspired me so much in my journey to veganism and I ALWAYS bring it with me when I go grocery shopping. TIA'S CREAMY CAULIFLOWER DILL SOUP
Serves 2-3
Ingredients:
1 tbsp of unrefined coconut oil
1 large onion chopped
4-6 garlic cloves chopped
1 large head of cauliflower cut into chunks.
Handful of florets separated from the head of cauliflower
6 tbsp of fresh dill
4-6 cups of vegetable broth
Sea salt
Instructions:
In a stockpot, melt oil
Add onion and sauté
Add garlic and sauté for a few minutes. Be careful not to burn garlic.
Add cauliflower chunks, fresh dill and enough vegetable broth until cauliflower is covered.
Simmer until tender (Usually 15 min.)
Purée in Vitamix or blender for about 5 minutes
Return to pot and add more vegetable broth depending on desired thickness soup. (I like it thick and creamy so I don't usually add any.)
Add sea salt and additional cauliflower florets. Simmer until tender and serve.
*Optional: If you want, you can add shiitake mushroom and cook for another 10 minutes.

I made this soup today along with the Acorn ginger squash soup. This one is ok but the Acorn ginger soup is AMAZING and on my top list. It is so smooth and creamy and Delicious. Thank you for sharing both with us -
I made the cauliflower soup last night & it was delish!! I must admit my husband is a huge meat & potatoes man & he loved it! Knowing that my family is still not totaly on board with eating too healthy I fried some fish to go along with it. Everybody loved it so I will try the acorn squash & ginger soup this wknd. Thanx for the recipie things this good maybe i can after all get my fam on the healthy board:) -
So I made the soup this past weekend and it was good. I added a few things to kick it up (garlic and onion powder and sundried tomatoes). I am eating it for lunch today in fact! I am going to try the other recipe you posted on Alicia Silverstone's webpage (acorn squash and ginger soup)this Friday for dinner. I'm going to use butternut squash as a sub. I'll let you guys know how that goes. -

Well I cooked the cauliflower dill soup, and I must say it was pretty interesting and good. Next time I will add real bacon bits or diced ham. As you can see I'm not vegan, but I want to incorporate some of your recipes in my diet. I also had to have something textural so I bought a whole grain baguette sliced thinly, brushed with olive oil, sprinkled a little garlic powder, and parsley, and browned in oven to a slight crisp. WALA BEAUTIFUL! Keep those simple but tasty vegan recipes coming. Thanks -

I made this Tuesday but did a few substitutions to it. First I used extra virgin olive oil and I added ginger powder and used thyme instead of the dill. It was SO good. My husband is not a big vegetable eater but I've started to be a vegetarian recently and WE both LOVED it. The everything has great health benefits. I am definitely going to make this part of my meal routines!!! Thanks TIA!!!!-
Selena my husband is a big meat eater also. Our daughter became a whole foods plant based eater a year ago. I came onboard last summer. I cook the same for all of us and make a meat to add to his meal for Hubby. Over time he has started to eat less meat, he now has at least 3 meatless meals a week. He's feeling the difference in his body(he finds he's more alert at work) and doesn't feel pressured to change. keep me up to date with progress!

I do not cook much, but I will definitely try this!:)). It looks really good, and all the ingredients seem very appealing too. Im into anything organic or public health related, so I'm def. excited to try!!:))). Thanks for sharing this! ...for me Ive never really made soup, but some of my favs are tomato and butternut squash--also I really like kale, so I want to make a kale and white bean type of soup too. -

I will definitely try this. The lemon water challenge was a success. I don't have a taste for coffee anymore. I am less gassy and bloated and I feel cleaner inside. I even tried yoga. At 47, I need all the advice I can get. Thank you so much!!! -
Ok i need for someone to hold my hands down, pinch my nose and make me try new things. Veggies yulk! Cauliflower yulk yulk just from yhe look of it and i havent even tried it lol. Seriously tho. I need help and advice on coming out of my traditional soul food and trying new foids...please help! Lol-
Hi Tammie - Have you ever tried a cleanse? I have transitioned my recipes over a period of 6 months. Once you retrain your taste buds by eliminationing salt & fats, you start to taste the foods real flavor. I love Cauliflower! The soup sounds and looks delicious. I am going to get the ingredients on my lunch break and try it tomorrow especially since we are going to have a lot of wet cold weather in the next few days. I love the warm water and lemon. I also am juicing now and making fruit smoothies. I am soooo happy that I have connected with the Tia & Tamera site. I have a whole new outlook on health, and enjoying life. sounds rather yummy.. turned veggie 3 weeks ago since all this horse meat scare.. But saying that l was never really a big one for red meats.
Like the sound of this soup - deffo will be trying... still loving the lemon water...
